I have to tell you something. It was not my intention to post this recipe again or change it. Some time ago I noticed that there were some people looking at one of my oldest posts- Marble cake. I looked at it too and frankly I didn’t like it. I remember that it was the time when I got my first digital camera and I was so excited about taking pictures with a real camera instead of a mobile phone! But in general I was not happy with the way I posted that recipe. Recently I’ve been experimenting a little bit with food photography (yes chiaroscuro style!), so I thought it was a good excuse to make this marble cake once again and take some new pictures and simply replace the old ones. In case someone would look at this post… Last week we had a family dinner, so there was an occasion and I made the cake. I remember that while I was placing it into the oven I wondered why the dough was so thick, but then I thought “oh well, maybe I added too much flour this time, that’s all”. I closed the oven, and after maybe 2-3 minutes I realized, that the butter, which I happily melted some time before, was still getting cold in the bedroom! Argh! Imagine this immediate rectification action! I run to get the butter, took out the cake from the oven, mixed everything once again… Made it! Now, the only thing I could do was waiting… I have to say that, when I saw the final result I was actually quite happy. I took some pictures of course, but we also ate this cake and it was delicious. At this stage it was simply a chocolate cake, and I loved the fact that it wasn’t perfect at all- I guess due to the shock after the butter situation… This recipe has been with my family for the last 30 years or so, and it was always my dad making this cake for us, when we were little. In the end I decided to share it once again, but this time as a chocolate cake. I hope you will like it, like my sister and I did.
Preparation time- around 25 minutes, baking time- 45-50 minutes, oven temperature 180 C
- flour- 2 glasses
- potato flour- half a tablespoon
- sugar- 1 glass, I always use brown sugar
- 200 gr of butter
- 6 eggs
- vanilla sugar
- lemon juice- freshly squeezed- use half of a lemon, not more
- olive oil- 2-3 tablespoons
- cocoa powder- 4 big tablespoons
- vinegar- half a teaspoon
- baking powder- 2 teaspoons
In advance melt the butter- I always slice it, just to make sure that it won’t burn. You can stir it from time to time and once it’s fully melted, leave it aside and let it cool down. Also grease the bundt pan with some butter and sparkle some bread crumbs. Preheat the oven.
In a glass bowl whisk together flour, potato flour and baking powder. Mix until all ingredients are incorporated evenly. Beat the whole eggs together with sugar, vanilla sugar and lemon juice. Prepare olive oil in a little bowl or jar.
Now we can start combining all ingredients together. To the bowl with eggs add gently the flour, the oil, and butter- yes, please remember to add the butter! Don’t forget to add the baking powder. Mix everything until absorbed properly, and then start again, until you manage to incorporate everything, including the vinegar. When the mixture is smooth and creamy, add cocoa powder and stir it gently, until it gets this nice chocolate color. If you think the mixture is too thick, add some water- 1 or 2 tablespoons.
Now you have to dollop the cake into the bundt pan and place it into the oven for 45-50 minutes. When the cake is ready dust it with some icing sugar.
