Yesterday it was a bad day. I mean like really bad. I woke up tired and in a bad mood. Then on the way to France I stopped at the cash machine and…I FORGOT my pin number!!! I blocked my card so no cash. Argh! Then, like it was not enough right, I saw THAT… Here is the thing. My car was parked on the private parking, and by the way it’s a new car- I bought it only last year. So, I was walking back to my car, and it was there…THE SCRATCH…You know what, I started crying when I saw how big it was. I could tell some idiot just pushed it as much as he could- so not only he damaged the paint but also one of the sensors, which is there for the parking option- yes, my car parks on it own (how cool is that awwwww), and of course he just took off! It already happened twice this year- always in France, just saying… So this time I decided I was not letting it go. The camera at the parking place was just in front of my car, and they told me if I go to the police and make an official complaint they will have to give them the record of what happened. So I did that. I went to the police station- the whole afternoon ruined as you can imagine, I don’t even mention the things I’ve seen there- and after about 3 hours I managed to talk to someone. I really hope they will get that bastard and I will make him pay…Oh yes… Now, this bread. This is my first serious bread recipe on this blog, and my first serious bread this year. Some of you might remember my Soda Bread recipe, but this bread is a proper one. Absolutely fantastic, crunchy as it should be, full of fresh herbs and I baked it in a cast iron pot! This is the first time when I used this method and I think I will stick to this way of making bread. Oh, I forgot to mention- yesterday I HAD to make all this up for myself and I bought a new cast iron pot in Le Creuset shop. It was expensive but frankly who cares…after all this what happened that day…
I know, you might wonder why bread. In the end we all are preparing for Christmas and you probably would expect another Christmas recipe. And that is why I’m not posting it 😀 I mean, Christmas recipes are everywhere, and I’m sure you can easily find whatever you’re looking for, so I decided to share with you this wonderful bread recipe. It’s quick and easy to prepare, honestly it’s a perfect fit for your Christmas table, yet so healthy and simply so handy in case you didn’t manage to buy bread, while you were shopping for Christmas! Also, I’m pretty sure some of you will truly appreciate this new method of baking bread, and if you happen to try it please let me know how it went for you.
Makes 1 bread, preparation time- more than 1 hour, time in the oven- 45-50 min, the oven temperature 240 C ( the original recipe says 260C but I went for 240C and it worked out perfectly well)
- 20 g of fresh yeast
- 2 tablespoons of warm milk
- 1 teaspoon of sugar
- 300 ml of water- warm but not too warm
- 450 g of flour- any type, prepare also some more for kneading the dough
- 1.5 teaspoon of salt
- 2 tablespoons of olive oil
- 2 tablespoons of freshly chopped herbs- oregano, basil, thyme, rosemary
- cash iron pot- mine has 24 cm diameter- 22 cm will also do
- 12 ice- cubes
You have to prepare the yeast- have a look here at my Brioche post, where I explain in great details how to do it. Leave the yeast aside for about 15 min in a warm and dark place. Once ready combine this mixture with the rest of the ingredients, apart from the herbs ( you can even use a hand mixer or a food processor for this part). The dough’s consistency is going to be a bit loose, but that’s the way it should be. In case you feel like adding a bit more flour just add some. I did it anyway. Knead the dough until everything is combined evenly, add the herbs and mix all together gently. Place the dough on a well floured cloth. Set it aside in a warm place for about 45 min-1 hour.
In the meantime prepare the oven- place the cast iron pot inside, set the temperature for 240/260 C ( if you can) and leave it like that for 30 min. Of course you have to synchronize the time when you set the oven with the time when the dough is “resting”.
When the dough is ready, take out the cast iron pot from the oven, and place the dough inside. Just like that. The beauty of this method is, that you don’t have to be worried about the shape of the bread, and also the high temperature this pot can sustain inside guarantees the crust is going to be lovely crunchy. Put the lid on the pot and place it into the oven- leave it like this for 30 min, with the lid on. Also- if you want your bread to be really crunchy set another baking sheet under the pot and place the ice-cubes on it. The steam will make the bread really soft inside but crunchy outside. I added some more water after the first 15 min of baking. After 30 min take the lid off and continue for another 15-20 min. Remember do not change the temperature. Bread requires very high temperatures. After 45-50 min your bread is ready. Look at the picture below. This is the bottom of my bread. I believe this is how it should look like. I also checked the noise it makes- and it’s kind of strange, distant. I was told it’s a sign the bread was baked properly.
I can’t even described the aroma in the house today. We ate it while it was still warm 🙂 This bread is delicious with any type of jam…
