Or maybe even more…
And then, there was mayonnaise… At least that’s how I see it!
Eggs and mayo- do you know anything better than that? I don’t, and today I’m going to share with you this recipe for a quick and very tasty starter- for the beginning of this New Year đ They say an egg is a symbol of life and new beginning, so I thought it would be a good idea to start 2015 by eating eggs and enjoying the very last moments  before we all go on a diet after what we have done to ourselves during the last few weeks. It’s one of the most simple starters I ever made- my mom used to make it for us for Christmas and the New Year’s Eves. My boyfriends loves it, and I make these eggs any time I want to make him happy without putting any bigger effort đ
Ingredients
Makes 10 servings, preparation time- 20 min,
- 5 eggs
- 150 g of mushrooms
- 3 teaspoons of mayonnaise- make it at home or buy a good quality one
- 1 teaspoon of natural Greek yogurt
- 1-2 tablespoons of olive oil
- salt and black pepper for seasoning
- Lettuce or any other greens of your preference
Method
In advance boil the eggs- for me 10 min in order to boil them hard.
Clean the mushrooms, dice them into thin slices, preheat the iron skillet and fry the mushrooms on the olive oil for about 10-15 min. Season accordingly. Set aside when ready.
Prepare the eggs- cut them in half and scoop out the yolks to a glass bowl. Combine them with the mushrooms, the mayo and the Greek yogurt. Season again if necessary- however remember that mayo is usually already salty enough.
Once you made the egg paste, fill the halves of eggs with it. Be gentle- it’s easy to damage them. I always place the eggs on a bed of lettuce- it looks nice and refreshing. But you can eat them as they come, since they are yummy anyway!
When the eggs are ready, make some mayo dots on top of each egg. My mom also adds some ketchup- if you like it just go for it! Let’s enjoy our last moments of this Christmas and New Year’s Eves decadence. Bon Appetit!!

I agree-it’s an egg with a bit of an attitude isn’t itđ I can’t imagine living without eggs to be honest with you. I guess it’s because we have always been eating them at my parents place. How was your NYE??? Did you make me proud?đ
